Seasoning Sauce Coating
The most basic and common liquid seasoning application method with seasoning sauce found in various areas; such as soy sauce, vinegar, balsamic sauce, oyster sauce, fish sauce and etc. This application method easily brings familiar character in area/culture of its particular sauce or instantly adds eccentric character using the one from foreign area/culture. In practice, this type of sauce is applied by spray or dip system while quick drying after application is equally a key.

Glossy Coating
This is variant of above basic liquid seasoning sauce coating to add glossy surface texture by similar process of marinating and baking/barbequing used in food preparation with high sugar content sauce/syrup. In order to deliver desired surface texture, snack base with smooth surface is suitable in this application. Thin layer of oil may be applied in the end to seal this high-sugar coating layer from absorbing moisture as well as to add extra character by flavor of particular oil.

“Frost” Coating
lightly whipped cream is applied on surface of large surface snack base and later gradually dried to deliver this unique texture which resembles to flow mark of water drops. The key for forming this pattern is to have enough amount of air inside syrup (cream), and high speed mixer/blender is commonly used as well as frost sugar to help it. Color is also added for extra surface character. |

Caramel Coating
Using more viscous sauce/boiled down syrup than above glossy coating, coating application of caramel and other thick sauce/syrup is growing in conventional nuts and popcorns as well as widening in puff snacks. Additional powder seasoning application on top is also seen. From sauce/syrup preparation to actual application, temperature shall be controlled in minutes order for application of these high viscosity materials. |
